This review surveys the pests that affect dry-cured ham during aging — including the ham mite, red-legged ham beetle, cheese skipper, and larder beetle — and the methods available to control them. With methyl bromide historically the primary fumigant for ham mites, the review discusses alternatives under investigation, including other fumigants, modified atmospheres, inert dusts, bioactive compounds, temperature control, and food-grade coatings.
