As part of the search for alternatives to methyl bromide, this study used laboratory assays to test food-safe compounds for their ability to prevent ham mite infestation on dry-cured hams. Ham pieces dipped in solutions of propylene glycol, lard, ethoxyquin, or butylated hydroxytoluene (BHT) prevented or significantly reduced mite population growth, pointing to practical, food-safe coating options for the ham industry.
